One of the most important things about this honey is that it is RAW. It is unpasturised, which means that it contains all the original enzymes. I never cook with this honey for this reason. It is great added to plain, organic yogourt with a dash of cinnamon and perhaps a few slices of banana. It not only contributes to gut heath; it is the most delicious honey I have ever tasted. Wouldn't use any other honey.
