Chelated minerals are bound to amino acids (units of protein) by strong covalent bonds that increase bioavailability and absorption of that mineral. Chelation occurs naturally in foods, eg. chromium in brewers yeast, calcium in milk and iron in haemoglobin. In the process of chelation the mineral is transferred from its inorganic state to an organic state, increasing the absorption of that mineral between 3 to 10 times.
