This sauerkraut is lightly pasteurised, so has no probiotic benefits, but it works fine if you just want to add some extra vegetables to your meal or are out of fresh veggies. This sauerkraut can be eaten warm and mixed into soups. Ceres have confirmed to me that this product is lightly pasteurised so that it doesn't need to be refrigerated until after opening, and can therefore be safely kept in the pantry until the use by date, like any other standard product.
For those of you who are new to fermented vegetables and are looking to balance gut bacteria or candida overgrowth, please note that natural 'Probiotic' sauerkraut is always stored in the fridge (even before opening) and has 'RAW' on the labels to indicate that it has not been pasteurised.
