Nori is a fantastic source of iodine, potassium, calcium and vitamins A and C. Try pairing this superfood with some salmon for a delicious lunch that provides a boost of omega 3 fatty acids, important for supporting normal healthy blood pressure and cholesterol levels.
Nori Salmon Wrap
Prep time 10 minutes
Serving size: 2
Ingredients
- 2 nori seaweed sheets
- ½ avocado
- 1 cup baby spinach leaves
- 100g smoked salmon
- ¼ cup shredded red cabbage
- 6 slices cucumber
Sauce
- ½ cup cashew nuts
- 2 TB lemon juice
- 2 TB filtered water
- 1 TB apple cider vinegar
- 1 TB white miso
- Pepper
Preparation
- Add all sauce ingredients to a blender and blend until a smooth texture.
- Assemble ingredients in center of nori sheet, drizzle with sauce and wrap it up.
