Ingredients:

Marinated chickpeas

Veggies (optional)

  • 1 cup red cabbage, sliced
  • 1 cup baby spinach leaves
  • 1 capsicum, thinly sliced (can roast if preferred)
  • 1/4 cucumber, diced
  • Selection of easy quick-pickled vegetables

Method:

  1. Combine the chickpeas, vinegar, oil, kelp salt, garlic and herbs in a medium bowl. Using a potato masher, crush the chickpeas slightly, mix everything together, and set aside to marinate.
  2. Meanwhile, prepare your veggies and toast your wraps (optional).
  3. To assemble, add an assortment of prepared veggies to the centre of the wrap - along with a few generous spoons of marinated chickpeas. Fold the ends in and wrap it up. Toast in a hot pan for a few minutes on each side until crispy (optional).
