Mood-boosting triple chocolate cookies with Ashwagandha recipe method

  1. Preheat the oven to 175°C and line two baking trays with baking paper.
  2. In a mixing bowl, briefly whisk the egg, then add the almond butter, coconut sugar, Ashwagandha powder and baking soda. Sift in the cacao, add the cacao nibs if using, and mix with a spatula (or your hands) until well combined. 
  3. Mix in three-quarters of the chopped hazelnuts and three-quarters of the chopped dark chocolate. Reserve the rest for topping.
  4. Scoop approximately one tablespoon of cookie dough and roll into a ball. Place the ball onto the prepared tray and gently press down with fingertips. Repeat with the remaining cookie dough. 
  5. Top each cookie with reserved chopped nuts and chocolate.
  6. Bake cookies for 12 minutes.
  7. Remove from the oven and sprinkle with flaky sea salt. Let the cookies cool on the tray before placing on to a wire rack to cool completely. The cookies will be slightly soft when first out of the oven. 
  8. Best enjoyed fresh or store in an airtight container for up 3 days.
