Chia pudding in a jar recipe

Chia seeds, the seeds of the plant Salvia hispanica, are native to central and southern Mexico and Guatemala but grows throughout South America as well.  Chia seeds are an ancient super food that has been used by the Mayans, Aztecs and Incas. In fact, chia is thought to mean “strength” in thesuperf language of the Mayans, and was considered food for stamina and endurance.

Nutritional research has shown that chia certainly has attributes that would aid in supporting healthy energy levels. It has high levels of dietary fibre and protein which help you feel full for longer and help with moderating blood sugar for steady energy flow. Ingredients

  • 1/4 cup Chia Seeds
  • 1 cup coconut milk
  • 1  Tbs maple syrup
  • Strawberries or other berries to decorate

Directions

  1. In a jar combine the chia seeds, coconut milk and maple syrup and shake/stir for a few minutes. Once combined pop in the fridge overnight.
  2. In the morning, remove pudding from the fridge and top with your choice of berries.
  3. Pop the jar lid on and it’s a healthy, yummy breakfast on the go!
