Chocolate Chunk Vegan Protein Balls

Protein balls are always a favourite when it comes to quick, easy and healthy meal prep. These no bake protein balls using VITUS Vegan Protein are no different. With 97% organic, vegan protein sources, blended with natural, healthy and delicious ingredients, this protein ball recipe will be at the top of your list when looking for a satisfying afternoon snack or after dinner treat.

Makes: 24 large protein balls
Preparation time: 10 minutes

Ingredients:

  • 1 ½ cups rolled oats
  • 1 banana
  • 2 Tbsp coconut oil (melted and slightly cooled)
  • ¼ cup almond butter
  • ¼ cup unsweetened shredded coconut
  • ¼ cup water
  • ¼ cup dark chocolate, chopped into chunks (we love the Loving Earth range!)
  • 4 serves VITUS Pure Plant Sourced Vegan Protein (or any other plain, unflavoured protein you might have on hand)

Method:

In a large bowl, mash the banana and add the coconut oil and almond butter and stir to combine. Add shredded coconut, rolled oats and VITUS Vegan Protein. Stir together while adding water slowly. The amount of water needed may vary according to mixture composition. Once you have a firm mixture, fold in your choice of chopped dark chocolate chunks.

Roll the mixture into balls of desired size and place in a sealable container lined with parchment paper. Place the protein balls in the freezer for an hour to set. Once set, remove from the freezer and keep stored in the refrigerator for up to 10 days.

Healthy tip:

Use your favourite nuts, seeds or dried fruit in place of chocolate chips for a nutritious alternative.
